A refreshing salad combining roasted beets and creamy goat cheese with a tangy dressing.
Ingredients

- 2 medium beets, roasted and sliced
- 4 cups mixed greens
- 100g goat cheese, crumbled
- 1/4 cup walnuts, toasted
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tsp honey
- Salt and pepper to taste
Instructions
- Preheat oven to 200°C (400°F). Wrap beets in foil and roast for 45 minutes or until tender. Let cool, then slice.
- In a bowl, whisk olive oil, balsamic vinegar, honey, salt, and pepper to make the dressing.
- Toss mixed greens with half the dressing.
- Arrange greens on a plate, top with sliced beets, crumbled goat cheese, and toasted walnuts.
- Drizzle remaining dressing over the salad.
- Serve immediately.
Notes
- Roast beets ahead of time for quicker assembly.
- Substitute walnuts with pecans or almonds if preferred.
- Add sliced red onion for extra flavor.
