Ingredients

- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 avocado, sliced

- 1 tsp honey
- Salt and pepper to taste
Instructions
- Cook the brown rice according to package instructions. Let it cool.
- In a large bowl, combine the cooked rice, cherry tomatoes, cucumber, avocado, red onion, and cilantro.
- In a small bowl, whisk together olive oil, lemon juice, honey, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Serve immediately or refrigerate for up to 2 hours for chilled serving.
