Ingredients

- 1 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1/4 cup diced vegetables (bell peppers, carrots, or peas)
Instructions
- Season the chicken breast with salt, pepper, garlic powder, and paprika.
- Heat olive oil in a pan over medium heat.
- Cook the chicken for 5-6 minutes per side until fully cooked.
- Remove the chicken, let it rest, then slice it.
- Mix the cooked rice with diced vegetables.
- Assemble the bowl with rice and sliced chicken on top.
Notes
- Use brown rice for extra fiber.
- Add a squeeze of lemon for extra flavor.
- Meal preps well for 3-4 days in the fridge.
