A healthy and balanced grilled chicken quinoa bowl packed with protein and nutrients.
Ingredients

- 1 cup quinoa
- 2 cups water
- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp paprika
- 1 avocado, sliced
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 cup feta cheese, crumbled
- 2 tbsp lemon juice
Instructions
- Rinse quinoa under cold water. Cook quinoa in boiling water for 15 minutes. Drain and set aside.
- Season chicken with salt, pepper, garlic powder, and paprika.
- Heat olive oil in a pan over medium heat. Grill chicken for 6-7 minutes per side until fully cooked.
- Slice grilled chicken into strips.
- Assemble bowl with quinoa, grilled chicken, avocado, tomatoes, cucumber, and feta cheese.
- Drizzle lemon juice over the bowl and serve.
Notes
- Swap feta cheese for goat cheese if preferred.
- Add a handful of spinach for extra greens.
- Store leftovers in an airtight container for up to 3 days.
