Description

A simple and flavorful Mediterranean-inspired dish combining tender chicken with fluffy couscous.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup couscous
  • 1 1/4 cups chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup diced cucumber
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped fresh parsley
  • 1/4 cup crumbled feta cheese

Instructions

  1. Season chicken breasts with oregano, paprika, garlic powder, salt, and black pepper.
  2. Heat olive oil in a pan over medium heat. Cook chicken for 6-7 minutes per side until fully cooked.
  3. Remove chicken from pan and let it rest.
  4. Bring chicken broth to a boil in a pot. Stir in couscous, cover, and remove from heat. Let it sit for 5 minutes.
  5. Fluff couscous with a fork and mix in cucumber, tomatoes, and parsley.
  6. Slice chicken and serve over couscous. Top with feta cheese.

Notes

  • Use whole wheat couscous for extra fiber.
  • Replace chicken broth with vegetable broth for a vegetarian option.
  • Add olives or roasted red peppers for more flavor.
