Ingredients

- 2 cups grated zucchini
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/4 cup vegetable oil
- 1 egg
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp cinnamon
Instructions
- Preheat oven to 350°F (175°C) and grease a baking pan.
- Mix grated zucchini, flour, sugar, oil, egg, vanilla, baking powder, and cinnamon in a bowl.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 25-30 minutes or until golden brown.
- Let cool before cutting into bars.
