A moist and flavorful quick bread made with grated zucchini.
Ingredients

- 2 cups grated zucchini
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 3 eggs
- 1 cup vegetable oil
- 2 cups sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 325°F (165°C).
- Grease and flour two 8×4 inch loaf pans.
- Combine flour, baking soda, baking powder, salt, cinnamon, and nutmeg in a bowl.
- Beat eggs, oil, sugar, and vanilla in a large bowl.
- Stir dry ingredients into the egg mixture.
- Fold in grated zucchini.
- Pour batter into prepared pans.
- Bake for 60-70 minutes or until a toothpick comes out clean.
- Cool in pans for 20 minutes before removing.
Notes
- Squeeze excess moisture from grated zucchini before using.
- Can add nuts or chocolate chips if desired.
- Freezes well for up to 3 months.
