Description

A moist and flavorful quick bread made with grated zucchini.


Ingredients

  • 2 cups grated zucchini
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 3 eggs
  • 1 cup vegetable oil
  • 2 cups sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 325°F (165°C).
  2. Grease and flour two 8×4 inch loaf pans.
  3. Combine flour, baking soda, baking powder, salt, cinnamon, and nutmeg in a bowl.
  4. Beat eggs, oil, sugar, and vanilla in a large bowl.
  5. Stir dry ingredients into the egg mixture.
  6. Fold in grated zucchini.
  7. Pour batter into prepared pans.
  8. Bake for 60-70 minutes or until a toothpick comes out clean.
  9. Cool in pans for 20 minutes before removing.

Notes

  • Squeeze excess moisture from grated zucchini before using.
  • Can add nuts or chocolate chips if desired.
  • Freezes well for up to 3 months.
