A colorful and healthy rainbow chopped salad packed with fresh vegetables.
Ingredients

- 1 cup chopped red cabbage
- 1 cup chopped carrots
- 1 cup chopped cucumber
- 1 cup chopped bell peppers (mixed colors)
- 1 cup chopped cherry tomatoes
- 1/2 cup chopped red onion
- 1/4 cup chopped fresh parsley
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Wash and chop all vegetables into small, even pieces.
- Combine all chopped vegetables in a large bowl.
- Add olive oil, lemon juice, salt, and black pepper.
- Toss gently until all ingredients are evenly coated.
- Serve immediately or refrigerate for up to 2 hours before serving.
Notes
- For extra crunch, add sunflower seeds or nuts.
- Use a mandoline slicer for even cuts.
- Adjust seasoning to taste.
