Ingredients

- 1 cup roasted butternut squash, diced
- 1 cup cooked brown rice
- 1 whole wheat tortilla
- 1/4 cup mixed greens
- 2 tbsp hummus
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat oven to 400°F. Toss diced squash with olive oil, salt, and pepper. Roast for 20 minutes.
- Spread hummus evenly over the tortilla.
- Layer mixed greens, roasted squash, and rice on top.
- Fold the sides of the tortilla inward, then roll tightly from the bottom.
- Slice in half and serve.
Notes
- You can substitute butternut squash with sweet potatoes.
- Add avocado for extra creaminess.
- Store leftovers in an airtight container for up to 2 days.
