Description

A delicious and healthy roasted veggie wrap packed with flavor and nutrients. Perfect for a quick lunch or light dinner.


Ingredients

  • 1 cup bell peppers, sliced
  • 1 cup zucchini, sliced
  • 1 cup eggplant, diced
  • 1 red onion, sliced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 4 large whole wheat tortillas
  • 1/2 cup hummus
  • 1 cup fresh spinach

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss bell peppers, zucchini, eggplant, and red onion with olive oil, salt, black pepper, garlic powder, and oregano.
  3. Spread the veggies on a baking sheet and roast for 25 minutes, stirring halfway.
  4. Warm the tortillas in a dry pan or microwave for 30 seconds.
  5. Spread hummus on each tortilla, add roasted veggies, and top with fresh spinach.
  6. Fold the sides of the tortilla in and roll tightly.
  7. Cut in half and serve immediately.
